Hitchbird sat down with Sylvain Pasdeloup, the General Manager, to learn more about weddings at this gorgeous resort.

Tell us a little bit about yourself, let our readers know what is making you to become managing this beautiful resort.

I am thirty-five years old and actually originated from France. I have been living in Asia Pacific for the past fifteen years and working with Sofitel for the past ten years. My background is mostly business hotels before but I decided to make a change and opened this beautiful resort here four years ago. Two/Three years ago, we decide to focus on the wedding segment because this segment is gowning in Bali and I think Bali is a very unique destination and is quite interesting for couples to build memories starting from the wedding here in Bali.

The resort is about four years old. Tell us a few statistics here. How many rooms do you have here and how many restaurants in the resort?

We have 415 rooms including 22 suites and 17 villas. We have a luxury room category with pool access and French pool of all 89 rooms in total. We have Club Millésime which is one of the largest we found in any five-star hotel in Nusa Dua. We have a beautiful spa which had been awarded many times. We have different types of dining. We have a Pan-Asian dining which is called Kwee Zeen restaurant. You have different cuisines from all over Asia Pacific with the chef originally the countries. For example, we have an Indian chef, a Chinese chef and of course an Indonesian chef and Japanese too. We have another restaurant which is called Cut Catch Cucina, is a blend of three concepts in one. “Cut” is for the steak house. "Catch" is for the seafood concept and "Cucina" is for the Italian background. This restaurant is extremely famous for its brunch. We have one of the most popular brunch on the island. Every Saturday and Sunday is called Weekend Chic Brunch.

Let’s talk about weddings here specifically. Roughly how many weddings you run per year? And do you see the couples come from? Is there a trend or a mix?

We had about 100 weddings a year. It is a very fair mix. We have a domestic market. Indonesia is a very strong market. The market that we care a lot. We have Indian market. This resort is actually one of the best destinations on the map for Indian wedding – this hotel and quite popular. We have of course weddings coming from everywhere. Australia is a big market for us, not only for FIT, not only for tourist travel, but those are for weddings. And of course, we have weddings from different Asia countries. We start wedding from twenty/thirty guests and we go up to more than one thousand guests. We build tent on the beach and we have a huge set up in this hotel.

Top 3 restaurants, outside of this beautiful resort, you would recommend our couples to try.

There are good dining and outing in Bali. One restaurant I like very much is Sardine restaurant in Seminyak. It is a very nice blend of French, European and Asian food. Another one I really love is an Indonesian restaurant. The name is Bambu, also in Seminyak. It has a very good sampling, in particular for tourists from different countries to Indonesia. The last one, totally different, is Mama San. which is a fusion Indonesian restaurant.

What is the unique selling point of Sofitel Bali Nusa Dua Beach Resort? And what make the resort different from other venues in Bali?

Sofitel is a French brand. The motto of Sofitel is to mix French elegance with local culture. And here in Bali, the culture is all about welcoming guests, of course the harmony, and we train to bring out some French ambience to guests and that’s why our staff is greeting people with for example 'Bonjour'.

We are here to accommodate what the couple want. We do have restrictions, terms and conditions, like everywhere else would have it, but I think our main aim is to ensure the wedding couple get what they want. One of the reason why we are one of the most popular destination wedding venues for Indian weddings is because the couples are entreated in term of what they want and what they look for in a wedding. And so far, we have been focusing on trying to accommodate that.
